The hock comes from the gammon which is the cured. It is the extreme shank end of the leg bone. Once cooked, the hock is suitable for lots of uses. The hock needs to be cooked slowly to get the full tenderness, the meat can then be used in numerous recipes, a great comfort food to make from the hock for example is pea and ham soup.
